I believe that one person can accomplish the task easier, with no conflicts, better focus on the end product and no communication related issues.
One person is more likely to spend more time on polishing the final product, one person is more responsible, gives better customer service.

Because when you’re a freelancer you don’t have your mother-company to take care of you, you have to create your own brand and develop product that will satisfy your customer.
There is no place for unfinished projects, putting work aside or missing deadlines.
